ALBACORE Tuna

The albacore tuna is the choicest of the four kinds of tuna. Its flesh is light in color and mild flavor is the reason it has been given the name “chicken of the sea”, and like the other three, is a very fast and strong swimmer. It averages 4 to 6 pounds but can reach 30 pounds. It is a very colorful fish, with a bright red belly and many bright green and yellow spots around its body. The aleoids are light in color and vary from almost black to bright red with a gold belly. They have a rather chewy flesh.
